About the Infusion Table: it allows the player to extract enchantments from items and store them in books. You need to create and place the Infusion Table. Place a book on the table. Place the enchanted item from which you want to remove the enchantment (it will disappear after the process). Use flint and steel on the table and enjoy the show.
